A quick side salad using five of the most common ingredients in Mediterranean cooking. Cucumber, tomato, olives, capers and lemons are almost always available in the pantry, making this an easy side to toss together at moments notice, but still pack a ton of flavor into your side dish.

1Hothouse CucumberPeeled, cut into medium chunks
1-2TomatoesCut into medium chunks
1 lemonzest a small amount (about 1/4 tsp) and set aside
2tbspextra virgin olive oil
kosher salt and fresh ground black pepperto taste
pinchdried oreganoor other dried herb
Add cucumber, tomato, olives, and capers to a medium bowl and toss to combine
Add the reserved lemon zest
Juice the lemon and combine about 1 tbsp of juice with the olive oil in a small mason jar
Add honey, salt, pepper and oregano to the mason jar and secure the lid
Shake vigorously to combine dressing
Add dressing to taste to the cucumber, tomato olive, and caper salad
This recipe is the ultimate 'about like that' recipe. Use as much or as little of any ingredient as you would like. Feel free to toss in some chopped chives, slivered almonds, or a handful of chickpeas. Enjoy!
