Turkish Inspired Tomato and Onion Salad⁠

Ingredients
  • 2 large tomatoes halved and cut in 8 - 10 wedges per half⁠
  • 1/2 red onion thinly sliced⁠
  • ½ cup flat leaf parsley roughly chopped⁠
  • Juice of 1 lemon⁠
  • 1 tablespoon extra virgin olive oil⁠
  • 1 teaspoon ground sumac⁠
  • Kosher salt and fresh ground pepper to taste⁠

Instructions

  • In the bottom of a large bowl, whisk together the lemon juice, olive oil, and sumac⁠
  • Add the onion slices and let sit for about 5 minutes to allow the onions to soften a bit in the dressing.⁠
  • Add tomato wedges and parsley and toss it all together to combine. ⁠
  • Season with salt and pepper to taste⁠
