Gin Tonic The Spanish Take on a British Classic

- 1 ¼ oz london gin
- 2 dashes Angostura bitters
- 1 4-5 slice of lemon peel
- 7 oz tonic water
- ice
- Garnish rosemary, cucumber, juniper berry or whatever
Take a large white wine style glass and fill with ice. Let glass chill for several minutes
Dump ice from glass, and wipe inside with the peel of lemon
Leave the peel in the glass
Add 3 -4 ice cubes to glass
Slowly pour gin over ice
Add 2 dashes of bitters
Slowly pour tonic water, letting fizz gently to combine flavors
Using a stir stick or handle of a spoon, gently stir one or two rounds of the glass
Add 1 -2 more ice cubes
